Apple Cinnamon Muffins
Apple Cinnamon Muffins
1/2 C. sugar (I use 1/3 C. honey)
4 Tbsp. butter, melted (I use 2 Tbsp. canola oil and 2 Tbsp. unsweetened applesauce)
1 C. milk (I use skim)
1 egg (I use Egg Beaters)
2 C. flour (1 1/2 C. whole wheat flour and 1/2 C. oatmeal--I use quick oats)
4 tsp. baking powder
1/2 tsp. cinnamon (I use 2 tsp.)
1/2 tsp. salt (I use 1/4 tsp.)
1 C. raw apples, finely chopped (leave the peels on)
Sift together flour, baking powder, salt, cinnamon, & sugar. Combine milk, egg, & butter and add to dry ingredients. Mix just enough to combine. Fold in apples. Drop into well greased muffin tins.
Topping (optional--I don't do this)
Place an apple ring (unpeeled) on top of each muffin & sprinkle tops with cinnamon & sugar mixture (2 Tbsp. sugar and 1/2 tsp. cinnamon) and chopped walnuts.
Bake at 400 degrees for 14-20 minutes or until toothpick inserted in center comes out clean.
