White Chocolate Crispies
White Chocolate Crispies
2 pkg. white chocolate chips
4 C. rice crispies
1 C. peanut butter (I used 1/2 creamy, 1/2 crunchy)
3 C. mini marshmallows
Microwave white chips & peanut butter for 1 minute, stir & then another 30 seconds. Pour chocolate mixture over rice crispies & marshmallows and mix until well coated (the marshmallows are not supposed to melt). Drop onto wax paper & let cool.
*Can also add M & M's if desired.

Pumpkin Muffins
Pumpkin Muffins
1 can (15 oz.) pumpkin
4 eggs (I use Egg Beaters)
1 C. oil (I do 3/4 C. unsweetened applesauce & 1/4 C. canola oil)
2/3 C. water
2 C. sugar (I do 3/4 C. honey)
3 1/2 C. flour (I do 2 C. whole wheat flour & 1 1/2 C. oatmeal)
2 tsp. soda
1 1/2 tsp. salt (I do 3/4 tsp.)
1 tsp. cinnamon (I add a little bit more)
1 tsp. nutmeg
1/2 tsp. cloves
1/4 tsp. ginger
Mix together pumpkin, eggs, oil, water & sugar until well blended. Sift in the dry ingredients & mix until just blended. Scoop into greased muffin tins and bake at 350 degrees for 15-20 minutes or until inserted toothpick comes out clean.
Makes approximately 28 muffins.
*I added some semi-sweet chocolate chips to a few of the muffins for a little treat & they were really tasty!

Peanut Butter Butterscotch Chippers
These cookies were really really good! Danny & I both loved them & he took some to the office that he was working at & they all loved them & asked for the recipe. I will definitely be making these again!
Peanut Butter Butterscotch Chippers
1/2 C. butter, softened
1/2 C. brown sugar
1/2 C. sugar
1 1/4 C. creamy peanut butter
1 C. melted butterscotch chips (I just followed the directions on the package)
1 egg (I used egg beaters)
1 tsp. vanilla
1 1/4 C. flour
1/2 tsp. salt (I did 1/4 tsp.)
1 C. butterscotch chips
sugar (for rolling cookies in)
Cream butter & sugars together. Add melted butterscotch chips & mix together. Mix in egg & vanilla. Sift in dry ingredients & mix. Stir in butterscotch chips. Shape dough into balls & roll in sugar & then place on a cookie sheet. Bake at 350 degrees for 8-11 minutes (I did mine for 9). We decided that we liked these cookies best once they are cooled.
*I did a double batch because we had several people we wanted to share with.

Beef Tips
Beef Tips
1 can french onion soup (I just used 1 can of beef broth & 3/4 pkg. onion soup mix)
1 can cream of mushroom soup
1 lb. beef tips or stew meat (I used stew meat & next time I'm going to do 1 1/2 lbs.--it needed more meat)
seasonings (I used salt, pepper, garlic powder, & onion powder)
Combine everything in crockpot & cook on low for approximately 8 hours. You can also do it in the oven--just put everything in a baking dish, cover with foil, & bake at 325 degrees for at least 4 hours.
Serve over mashed potatoes, egg noodles, or rice.

Fruit Salsa & Cinnamon Chips
I made this for a baby shower & it was a big hit, it is SO SO yummy--you must try this! It's super easy, just a little time consuming to cut up all the fruit, but it's so worth it!
Fruit Salsa
2 kiwis, peeled & diced
2 apples, peeled, cored & diced (I used Pink Lady apples & peeled them with a potato peeler)
8 oz. raspberries
1 lb. strawberries, diced
2 Tbsp. sugar (I just use a little bit of sugar or none at all)
1 Tbsp. brown sugar (I left this out)
3 Tbsp. fruit preserves, any flavor (I used this strawberry jam)
In a large bowl, mix all ingredients together (I waited to cut & add the apples until the very end). Cover & chill for at least 15 minutes before serving (I chilled mine for a few hours).
Cinnamon Chips
10 flour tortillas (I used the size for tacos--they're smaller than the burrito tortillas)
butter flavored cooking spray (I just used regular & they still tasted great)
cinnamon sugar (I did 1 C. sugar and 2-3 Tbsp. cinnamon)
Preheat oven to 350 degrees. Coat both sides of tortilla with cooking spray & cut into 8 wedges (I stacked 4 tortillas & cut them all at the same time). Put cinnamon/sugar mixture in a bowl & dip tortilla wedges in. Make sure both sides get coated (you could also put a bunch in a ziploc bag with cinnamon/sugar & shake it). Arrange in a single layer on a large baking sheet (I sprayed mine). Bake for 8-10 minutes or until tortillas are lightly browned. Cool completely & then serve with fruit salsa.
*I made the Cinnamon chips the night before & they were great!
*I did a 2 1/2 batch of the fruit salsa & I did 32 tortillas & it worked out great, so I would recommend making more than the 10 tortillas per batch of fruit salsa.

Lemon Bars
Lemon Bars
Crust:
1 C. butter, softened
2 C. flour
1/2 C. powdered sugar
Filling:
4 eggs, beaten
1/4 C. flour, sifted
2 C. sugar
6 Tbsp. lemon juice (I use freshly squeezed & saved the zest in the freezer for these blueberry muffins)
Mix crust ingredients & press into the bottom of a greased 9x13 pan. Bake at 350 degrees for 12-15 minutes. While the crust is baking, mix ingredients together for the filling. Pour filling over crust and bake for another 25 minutes (I use the toothpick method & it didn't come out quite clean, but the lemon bars were perfect, so be careful not to over-bake). Let bars cool completely & then sprinkle with powdered sugar & cut & serve.
*I used 2 lemons & got exactly 6 Tbsp. of juice

Dip Salad
Dip Salad
16 oz. cream cheese (I use the reduced fat)
16 oz. sour cream (I use the reduced fat)
2 pkg. taco seasoning (or 5-6 Tbsp.)
shredded cheese (I just sprinkled some on top, probably 1 C. or less & I use reduced fat)
shredded lettuce
sliced olives (optional)
tomatoes (optional)
green onions (optional)
tortilla chips
Mix together cream cheese, sour cream, & taco seasoning until smooth. Spread on a large platter and sprinkle on cheese, lettuce, and whatever toppings you choose. Serve with tortilla chips.
