1 3/4 C. flour (1 1/4 C. whole wheat flour & 1/2 C. oatmeal)
2/3 C. sugar (1/3 C. honey)
1 Tbsp. baking powder
3/4 tsp. salt (I do 3/8 tsp. salt)
6 T. butter (1/4 canola oil & 3/4 unsweetened applesauce to equal 1/3 C.)
1 egg (I use egg beaters)
1/2 C. milk (I use skim)
1 tsp. lemon zest
1/2 tsp. vanilla
1 C. fresh or frozen blueberries (I use frozen)
Mix dry ingredients together. Cut in butter. Beat egg, milk, lemon peel & vanilla. Stir into flour mixture until just moistened. Fold in berries. Spoon into muffin pan.
Bake at 400 degrees for 15-25 minutes. Makes 1 dozen muffins.
*I make these muffins using the healthier options (the one's in parenthesis) and the muffins are still really good! If you use the substitutions, make sure to fill the muffin tins mostly full with the batter because these one's don't raise much while baking. I'll have to post pictures of the healthier version next time I make them :)
