Mint Chocolate Pudding Cookies
1/2 C. butter, softened
1 C. sugar
1 egg
1/2 C. sour cream
1 small box (3.4 oz.) instant vanilla pudding mix
1/2 tsp. salt
1/2 tsp. soda
2 C. flour (I did less)
2 tsp. mint extract
3 drops blue food coloring and 10-15 drops green food coloring
1 1/2 C. chocolate chips (semi-sweet)
Cream together butter and sugar. Add in egg, sour cream, and pudding mix. Sift in dry ingredients and mix until just combined. Add in mint extract and food coloring. Stir in chocolate chips. Bake on greased cookie sheet at 350 degrees for 7-10 minutes.
