Chocolate Sheet Cake with Peanut Butter Frosting

Chocolate Sheet Cake with Peanut Butter Frosting

1 C. water

1 C. butter

1/2 C. unsweetened cocoa

2 C. sugar

1 3/4 C. flour, spooned lightly into measuring cup and leveled

1 tsp. soda

1/2 tsp. salt

3 eggs

3/4 C. buttermilk or sour cream (I used sour cream)

1 tsp. vanilla

mini Reese's Pieces for the top


Peanut Butter Frosting

1 10-ounce package peanut butter chips

1/3 C. butter

1/3 C. milk

1 tsp. vanilla

1 C. powdered sugar, sifted (measure it first and then sift)


In a medium saucepan, combine the water, butter and cocoa.  Over medium heat, stir the mixture frequently until it comes to a boil.  Boil for 1 minute, then remove from heat.  In a large bowl, add the flour, sugar, soda, and salt.  Whisk together to combine.  Add the eggs, vanilla, and sour cream and beat until blended.  Add the cocoa mixture and beat until just combined.  Pour into a greased 9x13 pan.  Bake at 350 degrees for 25-30 minutes or until toothpick inserted in center comes out clean.   Allow to cool completely.

To prepare the frosting, combine the peanut butter chips, milk and butter in a medium saucepan.  Stir frequently over medium heat until the chips are melted and the mixture is combined.  Remove from heat, then whisk in the vanilla and the powdered sugar until smooth and fluffy (you can use an electric mixer if you'd like).  Pour the frosting over the cake and smooth with a spatula.  Then, if desired, sprinkle with mini Reese's Pieces.  Allow to cool before serving.

Jeff's Peanut Butter Bars

This is a horrible picture, but it's better than nothing, right?!?! 😬  This is one of my most favorite desserts--sooooo good!

Jeff's Peanut Butter Bars

1 1/2 C. butter (3 cubes), softened

3 C. brown sugar

3 eggs (or 3/4 C. egg beaters)

2 tsp. vanilla

3 C. oats

2 C. flour

1/2 tsp. salt


Cream together butter and sugar.  Add eggs and vanilla and mix until fluffy.  Add in oats, flour, and salt until just combined.  Press into a greased jelly roll pan (13x18x1).  Bake at 350 degrees for 18-20 minutes (until toothpick inserted in the center comes out clean).  Remove from oven and let cool for 5-10 minutes.  While the bars are still warm, spread a generous amount of creamy peanut butter over the top.  Make the frosting while bars continue to cool.


Chocolate Frosting

3/4 C. butter

3/4 C. cocoa

4 C. powdered sugar

2 tsp. vanilla

4-6 Tbsp. milk (to reach desired consistency)


Melt together the butter and cocoa in a medium-sized sauce pan.  Remove from heat and stir in the rest of the ingredients.  Add more milk if needed.  Pour frosting over bars and spread until smooth.  The frosting should be thick and fudgy, but thin enough to spread over the bars.  Let the bars set for a couple of hours before cutting.

Hot Fudge


Hot Fudge

1/2 C. butter

1 Tbsp. cocoa

3/4 C. evaporated milk

2 C. powdered sugar


Melt butter in a saucepan over medium heat & stir in cocoa.  Add in milk & powdered sugar.  Bring to a boil & stir for 15 minutes.  Let set about 20 minutes before serving.

Presumption Bars


These were tasty & easy!



Presumption Bars


2 C. oatmeal

1 C. flour

1 C. brown sugar

1/2 tsp. salt (I used 1/4 tsp.)

1/2 tsp. soda

3/4 C. butter, softened (next time I think I will just melt it)

1 can (14 oz.) sweetened condensed milk

3/4 C. peanut butter (I used creamy)

1 bag (12 oz.) dark chocolate chips (I used semi-sweet)



In large bowl, combine oats, flour, brown sugar, salt, & soda.  Cut butter in to form crumbly mixture.  Reserve 1 1/2 C. and set aside.  Pat the remaining mixture into the bottom of a greased 9x13 pan.  In a small bowl, use an electric beater to mix peanut butter & sweetened condensed milk.  Carefully spread peanut butter mixture over the oatmeal layer.  Sprinkle with chocolate chips & then top with the reserved oatmeal mixture.  Bake at 350 degrees for 25 to 35 minutes.  Let cool for 1/2 hour before serving.

Gooey Bars


These are very fast, easy, & very good!  They are quite rich though :)




Gooey Bars


1 German Chocolate cake mix

1/2 C. butter, melted

1 1/2 C. mini marshmallows

1 C. semi-sweet chocolate chips

2 C. nuts and/or cheerios (I just used walnuts & I used way less than 2 C.)

1 can sweetened condensed milk




Mix butter & cake mix together.  Press into a greased 9x13 pan.  Sprinkle marshmallows, chocolate chips, and nuts over top (I only put nuts on part of it).  Drizzle sweetened condensed milk evenly over top.  Bake 17-25 minutes or until golden brown.  Let cool before cutting.

Chocolate Zucchini Muffins


These were SO yummy--everyone loved them & not too bad for you either!  You can also sprinkle on a little powdered sugar on the top for an added treat :)



Chocolate Zucchini Muffins


3/4 C. unsweetened applesauce

1/4 C. oil

3/4 C. honey

2 eggs (I use egg beaters)

1 tsp. vanilla

1/2 C. sour milk (add 1 tsp. vinegar or lemon juice to 1/2 C. milk (I used skim) & let it sit for 5 minutes)

1 1/2 C. whole wheat flour

1 C. oatmeal

5 Tbsp. cocoa

1/2 tsp. baking powder

1 tsp. soda

3/4 tsp. cinnamon

1/2 tsp. cloves (you can use nutmeg if you don't have cloves)

1/2 tsp. salt (I used 1/4 tsp.)

2 C. finely diced zucchini (I just shred it)

1 C. chocolate chips (I used semi-sweet & I just put 4 chocolate chips on the top of each muffin & press them down a little bit)



Mix batter in order of ingredients & fold in zucchini last. Pour into a greased 9x13 pan (or makes 24 muffins) & sprinkle chocolate chips on top. Bake at 325 degrees for 40-45 minutes (20-25 minutes for muffins) or until toothpick inserted in the center comes out clean. Let cake cool & sprinkle powdered sugar on top.

Mrs. Field's Chocolate Chip Cookies


This is a very yummy chocolate chip cookie recipe!  It's also very good using whole wheat flour as well.




Mrs. Field's Chocolate Chip Cookies


 2 C. butter, softened

1 1/2 C. sugar

2 C. brown sugar

3 eggs (I used egg beaters)

2 Tbsp. vanilla

6 C. flour (can do part whole wheat flour or all)

1 1/2 tsp. salt

1 1/2 tsp. soda

6 C. chocolate chips (I didn't use this much & I like to do 1/2 milk chocolate, 1/2 semi-sweet)

2 C. chopped nuts--walnuts or pecans (optional--I just put nuts in some of mine & I used walnuts)




Cream butter & sugars together.  Mix in eggs & vanilla.  Sift in dry ingredients & mix until just combined.  Stir in chocolate chips & nuts.  Bake at 350 degrees for 8-10 minutes.






 *I halved this recipe since it's such a big batch & it worked great.  I was able to do 1 1/2 eggs since I was using egg beaters, but I'm sure it would work fine just using 2 eggs.

Rocky Mountain Cookies


We made these for a church function & they were tasty!  Jace thought it was so cool that they had a "secret ingredient!"



Rocky Mountain Cookies


1 C. butter, softened

1 C. sugar

1 C. brown sugar

2 eggs (I used egg beaters)

1 tsp. vanilla

2 C. flour

2 C. old-fashioned oats (I just used quick oats)

1 tsp. soda

1/2 tsp. baking powder

1/4 tsp. salt (I did 1/8 tsp.)

2 C. Rice Crispies

2 C. chocolate chips (I used 1 C. semi-sweet & 1 C. milk chocolate)



In a large bowl, cream together sugars & butter.  Add eggs & vanilla & beat well.  Sift dry ingredients & add to mixture.  Fold in oats, rice crispies, & chocolate chips.  Drop by tablespoons onto a greased baking sheet.  Bake in a preheated 350 degree oven for 8-12 minutes or until very lightly browned.

Auntie Shar's Chocolate Cake


I made these cupcakes for a bake sale & they were very good. A very good basic chocolate cake recipe to have on hand. I also think it would be really good with cream cheese frosting.





Auntie Shar's Chocolate Cake


2 1/4 C. flour

1 1/2 tsp. soda

3/4 tsp. salt (I used 1/2 the amount)

1/2 C. cocoa

2 eggs (I used egg beaters)

1 1/2 C. sugar

3/4 C. oil (I used 1/4 C. canola oil & 1/2 C. unsweetened applesauce)

1 1/2 C. boiling water

1 1/2 tsp. vanilla



In a medium bowl, combine flour, soda, salt, & cocoa. Whisk to combine & set aside. In a large bowl, combine eggs, sugar, & oil and beat with a hand mixer. Alternating with boiling water, add flour mixture in 3 additions. Stir in vanilla. Pour into a greased 9x13 pan and bake in a preheated 350 degree oven. Bake for 25-30 minutes or until an inserted toothpick comes out clean. Cool completely before frosting.




Chocolate Frosting


1/2 C. butter, softened

1 C. cocoa, sifted

5 C. powdered sugar

2/3 C. milk (I used evaporated milk--I buy the little 5 oz. cans from Walmart & it's exactly 2/3 C.)

1 tsp. vanilla



Combine butter, cocoa & powdered sugar & mix until butter is smooth. Add milk & vanilla. Adjust with more milk or powdered sugar as needed.




*This made quite a bit of frosting, so I had some leftover--you can always use it with some graham crackers for a tasty treat!

Neiman-Marcus Cookies


These cookies are so good! A definite must try.




Neiman-Marcus Cookies


1 C. butter, softened

1 C. sugar

1 C. brown sugar

2 eggs (I used egg beaters)

1 tsp. vanilla

2 C. flour

2 1/2 C. finely blended oatmeal (I just used quick oats & blended them in my hand blender)

1 tsp. salt (I used 1/2 tsp.)

1 tsp. baking powder

1 tsp. soda

2 C. chocolate chips (1 C. semi-sweet, 1 C. milk chocolate)

4 oz. Hershey bar, frozen & then grated (I didn't have one, so I didn't use this)

1 1/2 C. chopped nuts (optional--I didn't use them, but I think it would be good)




Cream butter & sugars. Mix in eggs & vanilla. Add in dry ingredients until just combined. Stir in chocolate chips & nuts. Scoop dough onto greased cookie sheet & bake at 350 degrees for approximately 6 minutes or until just lightly browned.

Chocolate Chip Butterscotch Bars


I made these when we had the missionaries over for dinner & everyone LOVED them--especially with a glass of milk!





Chocolate Chip Butterscotch Bars


1 C. butter, softened

1 C. brown sugar

1 egg (I used egg beaters)

2 tsp. vanilla

2 C. flour

1/2 tsp. soda

1 1/2 C. semi-sweet chocolate chips

1 C. (4 oz.) chopped pecans (optional--I didn't use them)



Blend butter & sugar together. Add egg & vanilla & beat at medium speed until light & smooth. Sift in dry ingredients & add chocolate chips & nuts. Blend at low speed until just combined. Do not overmix. Transfer dough into a greased 8x8 pan & level top with a rubber spatula. Bake in a preheated 300 degree oven for 30-40 minutes or until toothpick comes out clean, but center is still soft. Cool on rack to room temperature. Cut into bars & serve.




*These bars are really thick, so you could probably do them in a 9x13 pan if you like your bars thinner--I like them thick though :)

Oatmeal Peanut Butter Cookies


I made these cookies for a mutual activity & did half with chocolate chips & half without & they were all gobbled up in no time! They passed the teenagers test, so definitely a yummy cookie :)





Oatmeal Peanut Butter Cookies


1 C. butter, softened

1 C. brown sugar

3/4 C. sugar

1 C. peanut butter (I used 1/2 creamy, 1/2 crunchy)

2 eggs (I used egg beaters)

1 tsp. vanilla

1 1/2 C. flour (I needed to add a little extra--closer to 1 3/4 C.)

2 tsp. soda

1 tsp. salt (I used 1/2 tsp.)

1 C. oatmeal (I used closer to 1 1/2 C.)

1-2 C. chocolate chips (optional)




Cream butter & sugars together. Mix in peanut butter, eggs, & vanilla. Mix in dry ingredients until just combined. Add in chocolate chips if desired. Scoop onto greased cookie sheet & bake in a preheated 350 degree oven for 8-15 minutes.

Peppermint Bark Popcorn

This was so so good! Both Danny & I loved it!




Peppermint Bark Popcorn


16 C. popped popcorn (2 bags of microwave popcorn--I used plain microwave popcorn & it worked great. Just make sure to get out all of the unpopped kernels)

1 lb. almond bark (I got mine at Walmart & it was around $3 for 1 1/2 lbs.)

1 (6 oz.) box peppermint candy canes, crushed (about 1 C.)

2 tsp. peppermint extract OR 1/4 tsp. peppermint oil (I used extract)

3/4 C. semi-sweet chocolate chips (optional--we like it without the chocolate)




Place popcorn in large bowl. Melt almond bark according to package instructions. When it's completely melted, add peppermint extract (it's normal for the almond bark to seize (get lumpy), just stir very quickly because the more you wait, the more it will seize). Pour melted almond bark over popcorn & pour crushed candy canes on top. Quickly stir to evenly coat. Pour popcorn out onto waxed paper & spread out (I put wax paper on a jelly roll pan & a 9x13 pan & then poured my popcorn on).


Place chocolate chips into microwave & heat in 30 second intervals, stirring in between, until melted & smooth. Drizzle over popcorn mixture (I just put mine in a plastic bag & cut off the tip of the bag). Let mixture dry completely until chocolate & almond bark are hardened. You can put it in the fridge to speed-up the drying process. When chocolate is hardened, use your hands to break popcorn into chunks. Store in an airtight container.

No Bake Peanut Butter Pie


This pie is SO yummy & easy! I got the recipe from my good friend Rach & they have it for Thanksgiving every year. I think we'll make it a tradition at our house too! I forgot to put on the Reese's P.B. cups for the picture, but you get the general idea :)




No Bake Peanut Butter Pie


2 (9-inch) prepared Oreo pie crusts

8 oz. cream cheese (I used Neufchatel cream cheese--reduced fat/calories)

1 1/2 C. powdered sugar

1 C. peanut butter (I used creamy)

1 C. milk (I used fat-free)

1 (12 oz.) container Cool Whip, thawed (I used Lite Cool Whip)

1 (8 oz.) container Cool Whip, thawed (I used Lite Cool Whip)

chopped Reese's Peanut Butter Cups (I used the minis & cut them in 4)

hot fudge/chocolate sauce, to drizzle over top (optional--I didn't use this)




Beat together cream cheese & powdered sugar. Mix in peanut butter & milk. Beat until smooth. Fold in the 12 oz. of cool whip. Pour mixture into the 2 pie crusts. Top the 2 pies with the 8 oz. container of cool whip. Freeze until firm (About 4-6 hours). Let the pie sit at room temperature for a few minutes before serving & top with chopped Reese's.

Nestle Toll House Chocolate Chip Cookie Bars


These are so yummy and fast & easy! Just your basic chocolate chip cookie recipe, but made into bars!




Nestle Toll House Chocolate Chip Cookie Bars


1 C. butter, softened

3/4 C. sugar

3/4 C. brown sugar

1 tsp. vanilla

2 eggs (I used egg beaters)

2 1/4 C. flour

1 tsp. soda

1 tsp. salt (I used 1/2 tsp.)

2 C. semi-sweet chocolate chips (I used M & M's instead for the bars)

1 C. chopped nuts (optional--I didn't use nuts)




Beat butter & sugars together. Add in vanilla & eggs & mix well. Sift in dry ingredients. Stir in chocolate chips and nuts. Drop spoonfuls of dough onto a cookie sheet or press into a greased jelly roll pan (15 inch x 10 inch). (The dough was really sticky, so I would wet my hands with some cold water & then press it down). Bake in a preheated 350 degree oven for 10-15 minutes or until golden brown. Cool & cut into squares.




* I like to do a 1 1/2 batch because I like my bars a little bit thicker :)

Cherry Cordial Cookies


These cookies were so fast, easy & tasty! I will definitely make them again if I can find the cherry chip cake mix (I haven't been able to find it here in Cleveland, but I found some in Idaho & brought it home with me :))




Cherry Cordial Cookies


1 Cherry Chip cake mix (the brand I found was Betty Crocker & it was at the Broulim's in Rigby)

1/2 C. butter, softened

2 eggs (I used egg beaters)

3 Tbsp. flour (I used whole wheat)

1 tsp. vanilla

2 C. milk chocolate chips (I used 1 to 1 1/2 C.)



Combine all ingredients, except chocolate chips. Mix well & then stir in chocolate chips. Scoop onto greased cookie sheet. Bake in preheated oven at 350 degrees for about 10 minutes. Makes 2 1/2 dozen cookies.





*FYI--the dough is quite sticky to work with, but the cookies turn out great!

Aunt Nida's Chocolate Chip Cookies


I've always loved these chocolate chips cookies--they are so yummy & soft!





Aunt Nida's Chocolate Chip Cookies



2/3 C. butter, softened

2/3 C. Crisco

1 C. sugar

1 C. brown sugar

2 eggs (I used egg beaters)

3 C. flour

1 tsp. soda

1 tsp. salt (I used 1/2 tsp.)

2 C. milk chocolate chips

1 tsp. vanilla (recipe didn't call for it, but I added it)




Cream butter, Crisco, & sugars. Add in eggs & vanilla & beat until fluffy. Sift in dry ingredients & mix until just combined. Stir in chocolate chips. Scoop cookie dough onto greased cookie sheet and bake at 375 degrees for 7-10 minutes or until edges of cookies are lightly browned.

Magic Cookie Bars


These were for a mutual treat & they were super fast, easy & good!




Magic Cookie Bars


1 1/2 C. graham cracker crumbs

1/2 C. butter, melted

1 can sweetened condensed milk

2 C. semi-sweet chocolate chips

1 1/3 C. coconut

1 C. chopped nuts (optional--I didn't use them)



Preheat oven to 350 degrees. In a small bowl, combine graham cracker crumbs & butter. Mix well & press into bottom of a greased 9x13 pan. Pour sweetened condensed milk evenly over the crumb mixture. Sprinkle on chocolate chips, coconut, & nuts. Press down firmly with a fork. Bake for 25 minutes or until lightly browned. Cool & chill if desired (I didn't chill mine). Cut into bars & enjoy!




*You can substitute 1 C. of the chocolate chips for butterscotch, peanut butter, or white chocolate chips.

Chocolate Chip Oatmeal Cookies


We made these cookies all the time growing up & they are one of my favorites!




Chocolate Chip Oatmeal Cookies

1/2 C. butter, softened

1/2 C. sugar

1/2 C. brown sugar

1/2 tsp. vanilla

1 egg (I use egg beaters)

1 Tbsp. water

1 C. flour

1 C. oatmeal (I use quick oats)

1 tsp. soda

1/2 tsp. salt (I use 1/4 tsp.)

1 C. semi-sweet chocolate chips




Preheat oven to 350 degrees. Cream butter & sugars together. Add water, egg, & vanilla & mix until fluffy. Sift in dry ingredients & mix until just combined. Add in chocolate chips. Scoop onto greased cookie sheet & bake for 8-10 minutes or until the edges of the cookies are lightly browned (I did mine for 9 minutes).




*This makes a small batch, so I always double it if I want cookies to share :)

No-Bake Cookies


We made these all the time growing up--they are so tasty & full of memories!




No-Bake Cookies


1/2 C. butter

2 C. sugar

1/2 C. milk

3 Tbsp. cocoa

1 tsp. corn syrup (optional)

1/2 C. peanut butter (I like to use crunchy)

1 tsp. vanilla

3 C. oatmeal

coconut, to taste (optional--I don't usually use it)




Combine butter, sugar, milk, cocoa, & corn syrup. Cook on medium to medium-high heat until it comes to a rolling boil. Take off of heat & stir in peanut butter, vanilla, & oatmeal. Drop (I like to use a cookie scoop) onto wax paper & let cool.
