Stromboli




This is what I do for home-made pizza & it's one of my favorite dinners!




Stromboli

1 loaf bread dough (I always buy the Rhodes--they come in packs of 3 or 5)

8 slices deli ham, thinly sliced (I only do 4 pieces & I like to use the Budding ham--it's cheap too!)

20 slices pepperoni (I only do 10 & I use the turkey pepperoni)

8 slices provolone cheese (I only do 4 & I like Sargento the best)

2 T. parmesan cheese (I never measure it, I just shake some on)

1 C. shredded mozzarella cheese (I just sprinkle some on--probably 1/4 C.)

1 tsp. garlic powder (I just sprinkle some on)

1 tsp. dried oregano (I just sprinkle some on)

1/4 tsp. dried parsley flakes (I just sprinkle some on)

1/4 tsp. pepper (I just sprinkle some on)

1 egg, beaten



Place dough on greased cookie sheet & cover with greased plastic wrap. Let dough rise until doubled. (I just take mine straight from the freezer in the morning & they're ready to go at about 3 pm.) Roll loaf into a 15x12 inch rectangle (I always just press it out on a greased jelly roll pan & just do it the dimensions of the pan). Arrange meats & cheeses down the middle of the rectangle dough. Sprinkle with spices. Fold dough around meat & cheeses & seal pressing dough together on seams & ends. Brush with beaten egg & then bake at 375 degrees for approximately 25-30 minutes. Let stand for 5 minutes before slicing. Slice loaf on a diagonal. Serve with pizza sauce for dipping.





I like to make 5 of these at a time & bake what we need & then freeze the rest. Wrap loaf with plastic wrap & then foil. Label & freeze. When I'm ready to cook them, I just take them straight out of the freezer and brush with a beaten egg & bake at 375 degrees for approximately 35-45 minutes. Or you can thaw the loaves and bake at 375 degrees for 25-30 minutes.




*You can do whatever kind of meats/cheeses you want. My sister & I made one that was ham & cheddar cheese for her kiddos & they liked it. This is also a great alternative to a pizza because different family members can have as much or as little pizza sauce as they like (I like tons more pizza sauce than Danny, so this works great)!

Brownie Pudding



This is so tasty & is one of my favorites!




Brownie Pudding

1 C. flour

3/4 C. sugar

2 Tbsp. cocoa

2 tsp. baking powder

1/2 tsp. salt

1/2 C. milk

2 Tbsp. oil

1 tsp. vanilla

3/4 C. chopped walnuts (optional--I never do the nuts, but it is good with them)



Mix all ingredients together & pour into a greased 9x9 pan.




3/4 C. brown sugar

1/4 c. cocoa

1 3/4 C. hot water (we always use milk--regular, powdered or evaporated milk)



Whisk together until mixed & then pour on top of the brownie batter. Bake at 350 degrees for approximately 40-45 minutes. Serve warm with ice cream or cool whip.

Cream Cheese Brownies


These brownies were so moist & tasty!




Cream Cheese Brownies

2 C. sugar

4 eggs

1 1/2 C. flour

dash of salt

1/3 C. cocoa

1 tsp. vanilla

1 C. melted butter



Topping:

8 oz. cream cheese

1/3 C. sugar

1 egg



semi-sweet chocolate chips



Mix all ingredients for brownie batter & pour into a greased 9x13 pan. Mix topping ingredients & pour on top of brownie batter. Run a knife through it to give a marbled effect. Top with semi-sweet chocolate chips. Bake at 350 degrees for 30-40 minutes or until toothpick comes out clean.

Oven Fries




If you know me, you know I love fries, so these are one of my favorites & they're so easy too!





Oven Fries

5 medium potatoes

canola oil (I just lightly spray the potatoes using my Misto)

seasoned salt



Scrub potatoes & cut into slices (not too thick or they will take forever to bake). Place on greased jelly roll pan. Drizzle oil over top of potatoes & sprinkle with seasoned salt. Bake at 350 degrees for 40-60 minutes (depends on how thick you cut the potato slices).



*We like to eat these with home-made fry sauce (mayo, ketchup, & a tiny bit of mustard)!

Fruit Loop Treats


These are yummy! It's just a rice krispies recipe, but with fruit loops instead.




Fruit Loop Treats

1/4 C. butter

4 C. small marshmallows

5 C. fruit loops (more or less--depends on the consistency you want)


Melt butter & marshmallows in a medium saucepan. Pour into fruit loops & mix thoroughly. Press into a greased 9x13 pan.




*You can also use Fruity Pebbles & do 1/2 those and 1/2 rice krispies.

Banana Muffins (Whole Grain)


These are so good! Danny & Jace loved them too & they're pretty healthy :) I made up this recipe using this blueberry muffin recipe as a guide.




Banana Muffins (Whole Grain)

1/3 C. canola oil (do 3/4 of the amount unsweetened applesauce and 1/4 oil)

1/4 C. honey

2 eggs (I use egg beaters)

1 1/4 C. whole wheat flour

1/2 C. oatmeal

1 tsp. baking powder

1/2 tsp. soda

1/2 tsp. salt

1 C. mashed ripe banana (2-3 bananas)

1/2 C. chopped walnuts (optional--we're not huge nut fans, so I don't ever add nuts, but I think it would be good)



Mix oil, honey, & eggs in a bowl. Put dry ingredients in sifter & alternate sifting in the dry ingredients & stirring in the banana. Bake at 375 degrees for 15-20 minutes.



Makes approximately 12 muffins.
