Cookie Salad

Once again, a very bad picture, but hopefully better than none at all!  I need to do better at getting more appetizing pictures! 😬

Cookie Salad

1 lg. box (5.1 oz.) instant vanilla pudding

2 1/4 C. buttermilk

2 cans (20 oz.) pineapple tidbits, drained

2 cans (15 oz.) mandarin oranges, drained

1 lg. container (16 oz.) Cool Whip

1 pkg. fudge striped cookies, crushed

Whisk together pudding mix and buttermilk until smooth.  Add in pineapple and mandarin oranges.  Fold in Cool Whip.  Stir in crushed cookies just before serving.

Raspberry Cheesecake Jello Salad

This isn't a very good picture, but I figured that it was better than nothing! 😁  This is soooooo good!  My kids beg for this and I always have at least one person ask for the recipe anytime I take it to a gathering!

Raspberry Cheesecake Jello Salad

32 oz. vanilla yogurt

2 small (3.4 oz.) instant Jello pudding mix (cheesecake flavor)

16 oz. Cool Whip

24 oz. pkg. frozen raspberries

Sprinkle dry instant pudding over vanilla yogurt and mix until smooth.  Fold in cool whip until well blended.  Stir in raspberries.  Mix well.  Chill and serve.

1 C. mini marshmallows

Mix all ingredients together & serve immediately. Refrigerate leftovers.

Asian Chopped Salad

This obviously isn't a recipe, but I just had to share because it is one of my favorite things right now! I eat this for lunch almost every day & the best part is that it's only $2.50 at Sam's Club & it lasts me for 3 servings! I like to add this leftover grilled chicken to make it even better!

Ambrosia Salad or 5 Cup Salad

This is really fast, easy, & tasty!

Ambrosia Salad or 5 Cup Salad

1 can mandarin oranges

1 small can crushed pineapple, drained (tidbits would work too)

1 C. coconut

1 C. mini marshmallows

1 C. sour cream

1 banana, cut up into small slices (add right before serving)

Mix all ingredients together in a bowl. Let chill for an hour or so before serving (add in the banana right before serving, otherwise it will be brown). Store leftovers in the fridge.

Pasta Salad

This is really easy & yummy!

Pasta Salad

1 (16 oz.) pkg. tricolor spiral pasta

1 (16 oz.) bottle Italian dressing (I use fat free and you can use more or less--depending how strong you want the flavor to be.  I usually use about 2 bottles.)

broccoli (cut-up)

cauliflower (cut-up)

carrots (cut-up)

sliced olives

Cook the pasta according to the directions on the package. Drain & let cool for a few minutes. Put everything together in a big bowl & let sit for a few hours in the fridge.  The pasta will soak up the dressing, so I always add some more before serving it.

*You can add whatever veggies you want--that's just what I like to use.

Chicken Chef Salad

So yummy! One of our favorite dinners--simple & healthy too!

Chicken Chef Salad

cooked chicken breast, cut up (we like to make extra of this chicken & use the leftovers)

lettuce (we use romaine)

veggies (we use carrots, celery, broccoli, & cauliflower, but you could do whatever you want)

*This is also good with boiled eggs too--I'm just too lazy to make them :)

*I like to make these Garlic & Cheese biscuits to go with.
