Fruit Smoothie


One of our favorite "treats," especially in the summer! They are so yummy & good for you too! We all LOVE these at our house--especially Jace! Danny likes them so much that he tried to figure out a way to add extra fiber to them by grinding up one of my wooden spoons in the blender :)







This is the bag of frozen fruit I buy at Sam's Club. It's just under $10 and it has strawberries, pineapple, mango, & peaches. 1 bag makes several batches, so it's a pretty good price.







I also get a bag of frozen blueberries & it's the same price as the fruit above. I use the blueberries to make these muffins too.





Fruit Smoothie


frozen fruit (I use strawberries, pineapple, mango, peaches, blueberries, banana, kiwi)

fresh spinach (I just put in a few handfuls)

apple slices

water (or you could use a fruit juice if you want)




Put fruit in blender (I like to fill the blender halfway full with blueberries & then fill it the rest of the way with the other fruit). I use 1-2 frozen bananas (I put them in the freezer if they are too ripe for eating & they are perfect for smoothies or also these muffins or this bread or these bars--just make sure to defrost them if you're using them for baking). It's a good idea to let the fruit sit out for a little while, so it's not quite so frozen (at least that's what works best with our cheap blender). Then just blend it up & add in some water or juice until you reach your desired consistency.





*These also freeze really well if you have some leftovers. We just put ours in a plastic cup & cover it with tinfoil & put it in the freezer. Then, when you're ready to eat it, you can defrost it in the microwave or let it defrost on the counter (we always use the microwave, because we never want to wait that long :)).
