Sweet Potato Dumplings

These are sooo yummy! Don't judge them by the horrible picture (it was at night) :)

This is how the dumplings look in the pan--they swim in that yummy sauce :)

Sweet Potato Dumplings

8 frozen yam pieces (I bought the kind that came with a mix for a glaze & just didn't use the glaze--the box I bought had enough yams to make 3 batches)

8 crescent rolls (I used the reduced fat)

2 C. sugar

1 tsp. cornstarch (mix with sugar)

2 C. water

3/4 C. butter (I only used 1/2 C. & next time I think I will use 1/4 C.)

cinnamon (to taste)

Roll yams in crescent rolls & press seams together. Place in greased 9x13 baking dish. Combine sugar, cornstarch, water, & butter in saucepan. Bring to a boil for about 1 minute. Pour over dumplings & sprinkle with cinnamon. Bake at 350 degrees for 25-35 minutes or until dumplings are lightly browned.

*These were our sweet potato side dish for Thanksgiving, but they are definitely a dessert & are very good served warm with ice cream!
