Peanut Butter Butterscotch Chippers


These cookies were really really good! Danny & I both loved them & he took some to the office that he was working at & they all loved them & asked for the recipe. I will definitely be making these again!





Peanut Butter Butterscotch Chippers


1/2 C. butter, softened

1/2 C. brown sugar

1/2 C. sugar

1 1/4 C. creamy peanut butter

1 C. melted butterscotch chips (I just followed the directions on the package)

1 egg (I used egg beaters)

1 tsp. vanilla

1 1/4 C. flour

1/2 tsp. salt (I did 1/4 tsp.)

1 C. butterscotch chips

sugar (for rolling cookies in)



Cream butter & sugars together. Add melted butterscotch chips & mix together. Mix in egg & vanilla. Sift in dry ingredients & mix. Stir in butterscotch chips. Shape dough into balls & roll in sugar & then place on a cookie sheet. Bake at 350 degrees for 8-11 minutes (I did mine for 9). We decided that we liked these cookies best once they are cooled.





*I did a double batch because we had several people we wanted to share with.
