Black Bean Soup


I know this soup doesn't look very appetizing, but it is so tasty (and fast & easy)! You'll definitely want to check your teeth after eating this though--those little black beans have a way of getting stuck :)








This is the cilantro that I use in all of my recipes. It's really good & it keeps for several months in the fridge. I found it in the refrigerated section by the produce at my grocery store. Looking for more recipes with cilantro--Chicken Tortilla Soup






I use this garlic for everything--it's just like using fresh garlic, but SO much faster!



Black Bean Soup


3 cans black beans, drained

1 1/2 C. vegetable broth (I used 1 can of chicken broth--which is 2 C. and it worked great)

1 C. chunky salsa

1 tsp. cumin

1 tsp. minced garlic

cilantro (to taste, I have made it without the cilantro & it is still good)




Blend all ingredients (except 1 can of black beans) in a blender (I used a hand blender) until fairly smooth. Place in a saucepan & add the 1 can of whole black beans. Cook over medium heat until the soup is heated through. Top each serving with any of the following: shredded cheese, sour cream, onion, and avocado. (We liked ours with a little bit of salt & sour cream).





*We had our soup for dinner with these Cheese Quesadillas.
