These are the best cookies ever! I've never met anyone who doesn't like them--unless of course you don't like peanut butter or oatmeal or chocolate, but then you'd have to be crazy :)

Monster Cookies
1 lb. butter (4 cubes) (softened)
2 lbs. brown sugar (4 2/3 C.)
4 C. sugar
12 eggs (I like to use 3 C. Egg Beaters or eggs)
1 Tbsp. vanilla
1 Tbsp. Karo syrup
3 lbs. peanut butter (4 1/2 C.) (I like to use crunchy)
8 tsp. soda
18 C. oatmeal (I like to do 1/2 old fashioned, 1/2 quick oats)
1 lb. M & M's (peanut butter M & M's are also really good in these cookies)
1 lb. chocolate chips (I like to use milk)
Cream butter & sugars together. Mix in eggs, vanilla, & Karo syrup. Add peanut butter & mix. Then mix in soda & oatmeal. Stir in chocolate chips & M & M's.
Bake at 350 degrees for approximately 8-12 minutes! Do not overbake!
Makes 16 dozen cookies.
*You can also make these into bars. A full batch will make 4 jelly roll pans. Make sure to grease the pans and I like to get my hands wet to press the dough into the pan since it's sticky. Bake at 350 for 12-15 minutes. Do not overbake! The edges will be slightly browned and the middle will look not quite done, but they'll continue to bake some in the pan after you take them out of the oven. Let them set for an hour or so to firm up so that you can cut into bars.
*I always 1/2 this recipe and it makes tons of cookies and fills my Kitchen Aid to the max! I usually like to cook a few pans and then freeze the rest--I like to scoop the cookie dough onto a pan & put it in the freezer until the dough is frozen. Then I put the frozen dough into a freezer bag and store it in the freezer & have fresh baked cookies in a matter of minutes! Or, they make really good little frozen treats if you like to eat raw cookie dough :)
