These cookies were so fast, easy & tasty! I will definitely make them again if I can find the cherry chip cake mix (I haven't been able to find it here in Cleveland, but I found some in Idaho & brought it home with me :))
Cherry Cordial Cookies
1 Cherry Chip cake mix (the brand I found was Betty Crocker & it was at the Broulim's in Rigby)
1/2 C. butter, softened
2 eggs (I used egg beaters)
3 Tbsp. flour (I used whole wheat)
1 tsp. vanilla
2 C. milk chocolate chips (I used 1 to 1 1/2 C.)
Combine all ingredients, except chocolate chips. Mix well & then stir in chocolate chips. Scoop onto greased cookie sheet. Bake in preheated oven at 350 degrees for about 10 minutes. Makes 2 1/2 dozen cookies.
*FYI--the dough is quite sticky to work with, but the cookies turn out great!

I love these cookies! Only certain places in ID have the mix too- let me know if you ever need some & I'll ship it to you Crystal! :) Thinking about you guys while Danny takes his boards tomorrow!
